I appreciate the need to be wary. Got nothing against anyone for that. But given the vaccine has been trialled heavily for several months and it's now being given to pregnant women, and there's been no reports of deformities or abnormalities since that, I'm willing to take my chances. For all I know, without taking the vaccine, I could contract the virus and not even be here in a year's time. That's realistic too.

I'd rather take the vaccine to give me some level of protection (long or short term) as opposed to getting the actual virus it will protect me from

Tell her that countries on the green list can easily go up to Amber or Red. Imagine if you changed to Portugal (which is on the green list now?), it goes on the amber list just before your holiday, and Turkey goes on the green list at the same time If you have cancellation options that last til August, you might as well wait til June or July (whenever the set times countries get updated). It'll be easy to book something last minute should you have doubts nearer the time anyway.
