As a result I really learned to embrace cooking vegetarian and sometimes vegan meals. Any good meal suggestions that are easy? I couldn't go vegetarian or vegan I don't think, but what would help is a wide range of knowledge of tasty meals.... I just like a bit of meat, there I said it. Tried pescatarian diet for a month or so a few years back. that's about it!! Quote

Any kind of curry with vegetables, or eggs. https://www.indianhealthyrecipes.com/punjabi-egg-curry-anda-curry-dhaba-style/ There are things like Lasagne where you just replace the meat with vegetables. https://cookieandkate.com/best-vegetable-lasagna-recipe/ Lots of other stuff like Falafel, Couscous, Bulgur etc. Bell peppers filled with bulgur, feta and vegetables are nice too. Nice, we do vegetable lasagna quite often, I also cannot tolerate gluten or spices since about 2022… so it’s a challenging time food wise these days! Quote
