I wish I could take the credit for this but this is all my dad's work. 

Stuffed peppers with minced lamb, topped with a bit of cheese. Couscous with carrots, cucumber, peppers, red onions, bit of cabbage. 

Oh and for Masterchef admirers, a red wine jus as well...

So I never posted it because I never found the exact recipe that I was thinking about! Didn’t wanna give you some shite recipe.

But this one is pretty much the exact same recipe it’s just the person who typed it up is a bit too chatty for my liking xD - but the instructions are pretty much the same https://www.isabeleats.com/mexican-pico-de-gallo-recipe/

Cooked pulled pork for the first time... Marinating in the fridge over night, then almost 8 hours in the oven. Served with roasted potatoes and some pico de gallo on the side...

Turned out better than expected, I think I'll make tortilla wraps with the rest of it 🤔

I'll take it as a compliment... The lamb was a tad too dry, by the way. Think I need to add more fat to the mince the next time.

Genuinely how it was intended! Very colourful and neatly arranged!

Agreed. Took me about 4 or 5 times to perfect a lamb keema dish with everything else.
